Fresh Fruit Tart

“When life gives you fruits, make fruit-tart.”    ( … or fruit-salad 😛 )

When I go grocery shopping, I pick up plenty of fruits thinking I should incorporate a lot of it in my diet as they are healthy and nutritious and blah blah blah. By the end of the week, I would still have most of the fruits lying in my pantry. This time, I made a quick fruit tart.

All you need is a basic pie crust, some whipped cream and fruits of your choice. 😀

Ingredients:

Flour – 1.5 cups
Cold butter – 1/4 cup
Cold water – 4-5 tbsp
Salt – a pinch

Step 1: In a bowl, mix the flour, salt and butter using a hand mixer, until the butter is distributed evenly.

Step 2: Gradually add in the water and try to make a soft, non-sticky dough.

Step 3: Cover with cling wrap and refrigerate for 30 minutes.

Step 4: Into a baking tray, spread some butter, and place the unwrapped dough in here. Spread with your palm and fingers until it covers the whole tray.

Step 5: Bake for about 15-20 minutes, until the pastry begins to brown at the edges.

Allow it to cool. Top with whipped cream and fresh fruits of your choice. I’ve added watermelon, plum, kiwi and pear. 🙂

Microwavable Mini Tres Leches (Three-Milk) Cake in 5 minutes

The other day, we were ‘FaceTime’-ing hubby’s sister in the US, and she goes on and on about this amazing ‘Tres Leches Cake’ that she tried. The way she explained it, I just couldn’t wait to try it. I immediately looked it up on Google and this is what Wikipedia had to say:
Tres Leches Cake is a basic sponge cake or butter cake, soaked in three kinds of milk: whole milk, evaporated milk and sweetened condensed milk. It is then topped with whipped cream and fruits of your choice.

Sounds amazing right?

I’ve followed a basic microwave recipe that can be made in a mug but I’ve used a square shaped microwavable box for easy slice-and-eat, and for better visualization.
You can follow the same recipe to make this in sandwich makers, waffle makers, or any other way you would like it. Call them Tres Leches Sandwiches or Waffles. 😀

Ingredients:
Serves: 1-2

Beaten egg – 1
Sweetened Condensed Milk – 1 tbsp
Melted Butter – 2 tbsp
Sugar – 2 tbsp
Flour – 4 tbsp
Vanilla essence – 2-3 drops
Baking powder – 1/4 tsp
Three-milks Mix:
4 tbsp – Whole Milk
4 tbsp – Evaporated Milk
4 tbsp – Sweetened Condensed milk

Step 1: Mix all the ingredients for the cake and microwave for 2 minutes.

Step 2: In a bowl, combine the three-milks.

Step 3: Poke holes in the cake with a fork and spoon-in the three-milks mix.

Step 4: Turn the cake upside down onto a plate and poke more holes. Spoon-in the rest of the milk-mix.

Step 5: Top with whipped cream and chopped strawberries, or you could just skip this step and dig in.

The Best Hot Chocolate Ever

How to make the best hot chocolate ever? By using the best “chocolate” ever.

I was gifted a 5 kg slab of chocolate on my birthday. I’ve been waiting for it to soften up so that I could cut it into cubes, pack and refrigerate.

With the onset of winter, I thought it would be a great idea to make myself some hot chocolate. I wanted to try adding in cubes of chocolate rather than chocolate chips or cocoa powder, for the ultimate, rich and creamy chocolate-y taste.

It was undoubtedly the best cup of hot chocolate I ever had.

Ingredients:
Serves: 2

Milk – 1 cup
Chocolate Cube – 1 (You could use 1/4 cup chocolate chips)
Sugar – According to taste
Coffee shot – 2 tbsp boiled water + 1 tsp coffee powder //optional

Step 1: Boil the milk.

Step 2: Incorporate the chocolate cube/chips into the milk, by letting it continue to simmer until well dissolved.

Step 3: Tip in the coffee shot to oomph up the flavor a bit.

Enjoy hot! 🙂

Note: Serves 2 because it is too rich to be consumed by one person alone. Happy sharing! 🙂

Protein-rich Tasty Salad

When should salad be served? Before a meal, or after a meal?

Our new routine is eating salad before lunch/dinner. This way, we eat wayyyy lesser, and stay full for longer. Sometimes, I even make myself a bowl of salad when I’m craving junk. A healthier alternative that tastes equally good, because of the olives, jalapenos and that little bit of mayo 😉 😀 :p

Having a bowl of salad 15 minutes before a meal is always a good idea. It usually takes about 15-30 minutes for your stomach to signal your brain whether you’re full or not. That’s why the 15 minute (minimum) gap.

So this is a basic pre-meal salad to help cut down on major carbs in your meal, or a ‘serves-1’ super filling MEAL 😀

Ingredients:
Serves: 2

A handful of your choice of legumes. I’ve used:
– Dark Red Kidney Beans
– White Chick Peas (Channa)

Two tbsp’s of each of the following:
– Fresh Corn
– Chopped Olives
– Chopped Jalapenos

Carrot – 1 (grated)
Cucumber – 1 (chopped)
Chopped Onions – a handful
Chopped capsicum(bell pepper) – a handful
Chopped Lettuce – 1 cup
Dressing of your choice –  (optional)
Flax seed (powdered) – 2 tbsp (optional)

Step 1: In a bowl, mix all the ingredients.

Step 2: Use olive oil or a dressing of your choice. I’ve added half a tbsp of mayonnaise just because of my love for it. 😀

Step 3: Add in flax seed powder for added crunch, protein, fibre and your daily dose of omega-3.

Quick & Easy Lasagna

Being served a fist-sized portion on a magazine sized plate is something we all hate. I personally loathe places/people that are stingy with regard to food. Who doesn’t?
 
Whenever we order lasagna at a restaurant, they present us with this tiny slice of it as though they’re undergoing some crisis. I mean, Seriously?

That’s when I was like, I need to make this at home and eat as much as I want and not bother troubling them in their time of ‘crisis’.

Lasagna is made with several layers of pasta sheets alternated with sauces and various other ingredients.

In my version,
Lasagna = (Pasta Sheets) + (Meat cooked in Tomato sauce) + (Bechamel Sauce)

Ingredients:

Pasta Sheets – 8-10

Meat cooked in Tomato Sauce:
Oil – 2-3 tbsp

Sausages – 10 (ground)  //You could use any kind of ground (minced) meat – 3 cups
Garlic Paste – 1 tbsp
Tomato Paste – 1 cup
Chilli powder – 2 tsp
Salt & Pepper – to taste

Bechamel Sauce: 
Butter – 4 tbsp
Flour – 5-6 tbsp
Milk – 2.5 cup
Salt- 2 tbsp
Pepper – 1 tsp
Cheese – a handful (any kind) //optional 

To garnish:
Chopped Spinach / Parsley – a handful  (optional)


Step 1:  Boil the pasta sheets and let them cook until 80% done. Strain and keep aside.

Step 2: In a non-stick pan, heat some oil and add the tomato paste, garlic paste, chilli powder and sausages to it. Cook for about 5 minutes or until done.

Step 3: In a pan, heat the butter and add the flour to it until well incorporated. Now add in the milk and whisk until its starts to thicken. Turn off the flame and let it cool while it continues to thicken. Add salt, pepper, and a handful of your favorite kind of cheese. Mix well.
(Here’s the link to Laura Vitale’s Bechamel Sauce recipe. I’ve followed the same technique, but used only the ingredients mentioned above.)

Step 4: In a baking dish, smear some oil and start layering.

Minced meat, bechamel, pasta sheets, bechamel, minced meat, bechamel and so on.

I like to start with minced meat as I feel it serves as a decent base. I also like to end with minced meat and top with the bechamel sauce. This way, once baked, its like a thick layer of bechamel and you can see the meat through the cheese. Makes it look all the more tempting. You could also sprinkle some chopped spinach/parsley leaves on top. I’ve used spinach as I like the flavor it imparts.

It wouldn’t take much time to set as all the ingredients are already cooked. Bake for a total of 20 minutes or until done.

Slice & enjoy hot! 🙂

Microwave Pita Pizza in 5 minutes

Anyone who knows to cook, always wants to try and make restaurant stuff at home in their very own healthier and tastier way. I’ve got this undying love for pizza, but the fact that it is cheese &  carb-loaded made me want to try a healthier version of it, using wheat pita, lesser cheese and zero-oil. 😀

The list of ingredients below calls for a non-veg topping of your choice, if required. I usually go for chicken, sausages or tuna, but you could use any kind of meat. When I have a lot of left-over chicken curry, so I shred the chicken and use. Here, I’ve used tuna.

Pita Pizza can be made at home in a microwave within a total of 5 minutes. Beat that! 😀

Ingredients:
Serves: 1

Pita Bread -1
Tomato Paste – 1 tbsp
Tuna – 4 tbsp                          //Any non-veg topping of your choice (optional)
Chopped Capsicum – 1 handful
Chopped Onion – a handful
Jalapeño – 1 (chopped)
Black Olives – 2 (chopped)
Mozzarella Cheese – as required
Oregano/Chili flakes or Salt/Pepper – according to taste

Step 1: Place the pita bread on a microwavable plate. Spread tomato paste over it.

Step 2: Top the pita with veggies, tuna, olives & jalapenos. Sprinkle mozzarella, oregano/chili flakes or salt/pepper  according to taste.

Step 3: Microwave for a minute or two, until the cheese melts. Enjoy hot.

Note:

By ‘healthy’, all I am referring to, is the switch from the pizza crust to a healthier pita bread. Those of you who are against microwave-ing, could bake the same until the cheese melts.

Beetroot Halwa with Vanilla Ice-cream

When everyone tries the regular carrot halwa, wouldn’t you want to go for something different?
Beets are one of my favorite vegetables, especially because of its color and the sweet taste that they are renowned for. Serving beetroot halwa with vanilla ice-cream is my staple party favorite, because you just need to make a little and serving it along with ice cream is always a hit. The redness of the beets makes it a point to stand out and add to the beauty of the dish.
So pick a few of them from your pantry, and make sure you have the below listed ingredients to begin with.

Ingredients:
Makes about 20 scoops.

Grated beets – 4 cups
Butter – 2 tbsp
Cardamom pods – a few (4-5)
Cinnamon stick – 1
Nutmeg – 1
Milk – 2 cups
Sweetened Condensed Milk – as per taste
Sugar – if required (according to taste)
Mint leaves – to garnish

Step 1: Grate the beets. Microwave for 3 minutes to speed up the cooking process.

Step 2: Add the butter to a pan, and once its heated, drop the cardamom pods, cinnamon stick and nutmeg.

Step 3: After a minute, add the grated beetroot. Let it cook for about 5 minutes, after which you could add the milk.

Step 4: Let the milk boil while the beets continue to soften and cook in the milk.

Step 5: After 5 minutes, add in the condensed milk.

Step 6: Cover and cook until most of the milk has evaporated and the halwa attains the required texture.

Serve hot with ice cream.

Note:

  • Remove the cardamom pods, cinnamon and nutmeg while serving.
  • You could use sugar instead of condensed milk.

Tomato-Fish Rice

This is a very simple recipe that I came up with, when I had just started to cook. So obviously, its going to be super easy.

In the beginning, the main ingredient I added to anything and everything was tomato paste. It is still one of my favorite ingredients to add to a dish because I absolutely love the flavor it imparts.

Ingredients:
Serves: 2

Brown rice – 1.5 cup
Fish fillet – 3 pieces
Fish Masala – as required (I used ‘Eastern’)
Oil – 5-6 tbsp
Onion – 1 cup
Capsicum – 1 (chopped)
Ginger-garlic paste – 1 heaped tsp
Tomato Paste – 0.5 cup
Chilli powder – 1-2 tbsp (add according to how spicy you want your dish)
Salt & Pepper – to taste
Coriander leaves – a handful (chopped)

Step 1: Marinate the fish and let it sit for about 30 minutes.

Step 1: Boil the rice until cooked. Strain and keep aside.

Step 2: Pan-fry the fish in minimal oil. When its almost done, you can start scrambling the fish in the pan itself. Once done, transfer the fish to a plate.

Step 3: In the same pan, add a little more oil if required and saute the onions until translucent. Add in the chopped capsicum and cook for a while.

Step 4: Add tomato paste, ginger-garlic paste, chilli powder and mix well. Cook for 5 minutes or so until its raw flavor is lost.

Step 5: Now mix in the cooked fish, rice and coriander leaves. Serve hot.

You could add in more ketchup/hot sauce according to your taste.

Masala Chai

It’s starting to get a little cold in Saudi and I’m always relying on cups of tea and coffee to keep warm. I used to be this hardcore coffee lover who hated tea, but I had never tried Masala Chai back then. Recently, I happened to try it a few times and fell in love with it.

Here’s presenting my version of it. 🙂

Ingredients:
Serves: 2

Water – 1 cup
Milk – 1cup
Black Tea-bags – 3
Sugar – 2.5 tbsp
Cardamom – 4 pods (crushed)
Ginger – 2 inch piece (crushed)

Optional:
Pepper corns – 6-8
Cloves -5
Cumin – 1 tsp
Cinnamon – 1 small stick
 

Step 1: Boil 1 cup water along with the tea-bags, sugar, crushed cardamom and ginger.

(Adding the optional spices takes the masala chai to a whole new level. You could choose to skip it.)

Step 2: Add 1 cup milk and bring to a boil.

Step 3: Strain and serve hot.

Nutella Date Truffles

Dates are one of the most popular fruits of the Arabian Peninsula. It’s health and nutritional benefits are endless. In Saudi, you find dates all-year-round. Fresh dates are way softer and juicier, when compared to the packaged dry ones.

Imagine these healthy goodies with an “edible-seed” and coated with your favorite chocolate spread.
All you need is 10 minutes.

To make date truffles, fresh dates would be better, but you could go for the dry ones too.

If you choose to use the dry ones, it would be ideal to soften them by soaking the dates in warm water for about 5 minutes.

Ingredients:

Dates – 10
Cashew nuts – 10
Nutella / Chocolate Spread – to coat the dates
A coating of your choice- I’ve used: Oats / Chopped Mint Leaves / Coffee Powder / Shredded Coconut

Step 1: Replace each seed with a cashew nut, so its more like a date with an “edible-seed”.

Step 2: Roll the dates and shape them into perfect balls.

Step 3: Dip and coat with Nutella or a chocolate spread of your choice.

Step 4: Smear each truffle with a coating of your choice.
